One of the best parts about planning a wedding is the free food. You need a caterer for your special day and they are more than willing to whip something up to show you what they can do. When we started out to find a caterer I figured they’d be serving up tiny little plates with perfect little raisin size hors d’oeuvres. I figured there would be high brow wine tasting and pretentious little snobs bitching about how carrots don’t pair with potatoes unless there’s cumin involved.
A magical thing happened. I was wrong. These folks serve you more food than you could possibly eat in one sitting[1. Good to remember in the event that I ever become homeless]. If you’re lucking they send you home with the leftovers. I am seriously in heaven during this phase of the wedding planning. On our first day of caterer shopping we each had full servings of eggplant parmesan, roasted vegetables, veggie lasagne, and baked ziti. I ate five slices of cake after that.
Tonight we had cheese, spinach and corn, and black bean enchiladas. We followed that with bean and cheese jalepeno chimichangas, vegetable chimichangas, green corn tamales, veggie fajitas, corn chips and queso, pinwheels, and Mexican rice. OMG . If they had given us a shot of Tequila I would have died instantly from sheer delight.
Call me naive but planning a wedding doesn’t suck. In fact, I think I’ll try to keep this part of the process going for least a few more weeks.
