California Rolls are delicious and definitely open for adaptation. Usually they come with imitation crab, which is actually just processed fish, but there are plenty of Vegan and gluten-free versions as well. One such recipe is in The Veggie-Lover’s Sriracha Cookbook.
I had been having some intense sushi cravings, so I gave it a shot. I didn’t have a sushi mat, but made due with parchment paper and plastic wrap; and I left out the cucumbers and Sriracha.
Everything turned out great! They were as good as I had hoped they would be, and I will definitely make them again.
